Vallformosa Florinda Brut Cava NV
This Cava shows lively bubbles, fine acid structure and yeasty complexity - pretty impressive for an under $20 sparkling wine! It is a great accompaniment to shellfish, chicken, fried food and spicy dishes.
The nose displays fruity aromas of pineapple, banana, apricot and toast. These notes carry through to the palate and are complemented by very refreshing acidity.
This tantalizing Cava is made with a blend of three classic Spanish grape varieties - Macabeo, Xarello, and Parellada. They are all carefully selected from the Montsarra vineyard in the Penedes region of Spain.
The family name Vallformosa first appeared in local Spanish history books in the 10th century. The winery in Penedes dates back to 1895 and has been owned by successive generations ever since. The region of Penedes is renowned for Cava production and can be considered the Champaign region of Spain. That's because it makes the country's finest sparkling wines from it's own indigenous grape varieties. The region lies in Catalan near Barcelona and the Mediterranean Sea.
Like most of the world's finest sparkling wines, this Cava was made in the Traditional Method with two fermentations - one in the tank and one in the bottle. It was then aged for a year on lees.
